Let’s Cook With Guinness On St. Patrick's Day!

It's actually no surprise that the world's average daily Guinness consumption doubles on the 17th of March! Fellas in green hats will be overdosing on the intakes! We certainly approve of a pint after dark to relax those neurons. But there are plenty of other ways to enjoy the frothy nectar! How about some nice, tummy-rumbling recipes to enjoy your Guinness on St. Patrick's Day?

Hearty Beef and Stout Stew

For a cosy, warming meal, this is the recipe to turn to! The Guinness adds just the right amount of bitterness to balance the flavours. Plus, it cuts through the richness of the stew, making it a light side-dish for any main course! Set the timer... it simmers for only 15 minutes!

What Are The Ingredients You Need?

  • 12 oz. of boneless beef trimmed and thinly sliced.
  • ¼ teaspoon of salt
  • ¼ teaspoon of freshly ground pepper
  • 5 teaspoons of olive oil
  • 2 cups of finely chopped onions
  • 1 ½ cups of cut carrots
  • 6 oz. of cremini mushrooms (chef's pick!)
  • 3 thyme sprigs
  • 1 tablespoon of tomato paste
  • 2 teaspoons of minced garlic
  • ¾ cup of Guinness Beer
  • 1 ½ cups of unsalted beef stock (we recommend Swanson)
  • 1 tablespoon of all-purpose flour
  • 1 ½ teaspoons of soy sauce 

Start Cooking!

Step One: Sprinkle the beef with salt and pepper. Heat a large skillet over medium-high heat. Drizzle some olive oil to coat. Toss the beef and cook for 3 minutes. We're looking for brown sides. Set aside once done.

Step Two: Toss the chopped onions, carrots, mushrooms and thyme in the pan and sauté for 4 minutes. Add in the tomato paste and minced garlic and cook for 1 minutes. Add the beer and scrap the pan to loosen browned bits. This will release a roasted crunch to your stew!

Step Three: Combine the beef stock and flour and pour in the veggies. Let the stew simmer for 15 minutes. Finish by adding in the beef and let it all set for 2 minutes. Lightly drizzle with soy sauce before serving.

Stout Mac And Cheese

Witness the combo of beer and cheese! The little bitter note of Guinness adds the little extra to the rich cheese sauce! For this variation of homemade mac and cheese, you'll have a golden, crisp and creamy share!

What Are The Ingredients You Need?

  • 7 oz. of uncooked pasta or macaroni
  • 2 teaspoons of canola oil
  • 4 oz. of Hot Turkey sausages
  • ¾ cup of diced onions (we prefer yellow!)
  • 2 ½ tablespoons of all-purpose flour
  • ½ teaspoon of freshly ground pepper
  • A pinch of Kosher salt
  • 1 cup of Guinness Beer
  • 1/3 cup of whole milk
  • 5 oz. of fine aged or sharp cheddar cheese
  • 2 ounces of light processed cheese

Start Cooking!

Step One: Preheat your oven at 450 degrees.

Step Two: Cook your pasta according to the package directions. Do not add salt or oil. Drain the water.

Step Three: Heat a large saucepan over medium-high heat. A little drizzle of oil to coat the pan. Add the sausages and onions to the pan. Cook for 6 minutes, crumbling the sausages. Toss in the flour, pepper and salt and let the mixture cook for one minute. Slowly pour the beer and bring to a boil. Don't forget to keep on stirring.

Step Four: Add the milk, cheese and stir on low heat until you are left with smooth and creamy mixture (mmm...). Combine with the pasta.

Step Five: Divide evenly among 4 ceramic dishes and top it off with grated cheddar. Bake at 450 degrees for 10 minutes or until lightly browned. Voila!


Chocolate Stout Brownies

Dark chocolate and Guinness beer is a match made in heaven! And these fudgy brownies really do deliver the flavours! The dash of beer into the batter is what will leave you with extra decadent and irresistible brownies. Pro-tip; the brownies will disappear fast... you'll want to double up on the recipe quantities!

What Are The Ingredients You Need?

  • 5 oz. (or 1/3 cup) of whole-wheat pastry flour
  • ¼ cup of unsweetened cocoa (or a little bit more for extra Choco flavour!)
  • ½ teaspoon of Kosher salt
  • ¼ cup of butter
  • 2 tablespoons of canola oil
  • 4 ½ ounces of dark chocolate
  • 2/3 cup of Guinness Beer mixed with 1 tablespoon of coffee
  • ¼ cup of granulated sugar
  • 2 tablespoons of brown sugar
  • 1 teaspoon of vanilla extract
  • 1 large egg
  • 1 large egg yolk

Start Cooking!

Step One: Preheat oven at 350 degrees.

Step Two: Sieve the flour, cocoa and salt in a medium bowl.

Step Three: Combine the butter, oil, 3 oz. of Chocolate in a large bowl and melt over simmering water. Stir occasionally and let it cool slightly once done.

Step Four: Add in the beer, granulated sugar, brown sugar, egg, vanilla extract, egg yolk and beat with a mixer for one minute or until combined.

Step Five: Roughly chop the remaining chocolate and add in the wet ingredients along with the flour mixture. Stir.

Step Six: Pour the batter in a baking pan coated with butter or oil. Bake at 350 degrees for 30 minutes or until a toothpick comes out with moist crumbs (yes!). Serve with ice cream and garnish with mint springs for the St. Patrick’s Day feeling!
